  • 2 ounces cream cheese (softened, 56g)
  • ¾ cup fresh spinach (finely chopped, 24g)
  • 3 tablespoons grated parmesan
  • 2 tablespoons diced tomato
  • 2 cloves garlic (minced)
  • ¼ teaspoon ground black pepper
  • ⅛ teaspoon salt

Instructions

  1. Prepare Filling: In a small bowl, thoroughly mix the softened cream cheese, finely chopped spinach, grated parmesan, diced tomato, minced garlic, ¼ teaspoon ground black pepper, and ⅛ teaspoon salt until all ingredients are well combined into a smooth filling.
  2. Prepare Chicken Breasts: Place each chicken breast on a cutting board and carefully cut a pocket into the fattest long side of each breast without cutting all the way through, creating a cavity for stuffing.
  3. Stuff Chicken: Spoon the prepared filling mixture into each chicken pocket, filling evenly, then secure the opening with toothpicks to prevent the filling from spilling out during cooking.
  4. Season Chicken: Rub the exterior of each stuffed chicken breast with 1½ teaspoons olive oil, then sprinkle evenly with ½ teaspoon salt, ½ teaspoon garlic powder, ½ teaspoon paprika, and ¼ teaspoon ground black pepper to season the outside.
  5. Preheat Air Fryer: Set your air fryer to 375°F (190°C) and allow it to preheat before cooking to ensure even cooking.
