Ingredients

Scale

Chicken Filling

  • 2 chicken breasts, finely diced
  • 2 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp minced fresh ginger

Coleslaw

  • 1 (397g) bag coleslaw
  • 4 green onions, thinly sliced
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp honey

Wonton Shells and Garnishes

  • 16 Wonton wrappers
  • Sweet chili sauce, to serve
  • Chopped cilantro, to serve
  • Sesame seeds, to serve
  • Cooking spray or olive/canola oil, for spraying

Instructions

  1. Prepare Wonton Shells: Preheat oven to 375°F (190°C). Spray the wonton wrappers lightly with cooking spray or brush with some olive or canola oil. Drape them over the side of a 9×13 inch baking dish. Bake for 7-8 minutes, watching carefully to prevent burning. Remove from oven while pliable and gently pull the shells apart to create taco-like shapes. Return to oven and bake for another 7-8 minutes until golden and crispy.
  2. Cook Chicken Filling: In a large bowl, combine the finely diced chicken breasts with hoisin sauce, 1 tablespoon sesame oil, soy sauce, minced garlic, and minced ginger. Heat a large skillet over high heat and sauté the chicken mixture for 7-8 minutes, stirring frequently, until the chicken is fully cooked and well-coated with the sauce.
  3. Prepare Coleslaw: In another large bowl, combine the coleslaw mix with sliced green onions, 1 tablespoon sesame oil, rice vinegar, soy sauce, and honey. Toss well to evenly coat all ingredients.
  4. Assemble Tacos: Spoon the cooked chicken mixture into each baked wonton shell. Top generously with the prepared coleslaw. Drizzle each taco with sweet chili sauce, then garnish with chopped cilantro and sesame seeds. Serve immediately to enjoy the contrast of crispy shell and fresh toppings.

Notes

  • Keep a close watch on the wonton wrappers while baking to avoid burning, as they can brown quickly.
  • If you prefer, you can pan-fry wontons instead of baking to achieve a crispy texture.
  • For a spicier kick, add some sriracha or chili flakes to the chicken or coleslaw dressing.
  • These tacos are best served fresh to retain crispiness of the shells.
  • You can substitute the chicken breasts with chicken thighs for a juicier filling.
