Instructions

  1. Preheat Oven: Heat the oven to 180°C (160°C fan) or gas mark 4, preparing for baking.
  2. Mix Dry Ingredients: In a large bowl, combine the oat flour, vanilla whey protein, baking powder, cinnamon, and mixed spice. Stir well to evenly distribute all dry components.
  3. Add Wet Ingredients: Incorporate the mashed bananas, milk, and beaten egg to the dry mixture. Stir thoroughly until the batter achieves a cake-like consistency, smooth and well blended.
  4. Prepare Baking Dish: Lightly oil a small baking dish or four individual ramekins with flavourless oil to prevent sticking.
  5. Assemble Batter: Spoon the batter into the prepared baking dish or ramekins. Drop the smooth peanut butter onto the batter and gently swirl it through to create delicious pockets of flavor.
  6. Bake: Place the dish in the preheated oven and bake for 20-25 minutes until the oats have risen and the top is golden brown and firm to touch.
