  • 2 tbsp Corn starch
  • 2 tbsp All Purpose Flour (Plain flour)
  • 2 tbsp Rice Flour
  • ½ tsp Salt (to taste)
  • ½ tsp Black Pepper Powder
  • 1 tbsp Peri Peri Seasoning

  • 1 medium Onion (peeled & chopped finely)
  • 1 Green Chilli (chopped finely)
  • 3 tbsp Coriander Leaves (finely chopped)
  • 2 tsp Lemon Juice
  • Refined Sunflower Oil (for deep frying, quantity as needed)

Instructions

  1. Prepare the Sweet Corn: If using frozen sweet corn, microwave it for 1 minute to thaw and cook slightly. For fresh corn, boil it in water for 4 to 5 minutes until tender. Drain the corn well to remove all water.
  2. Coat the Corn: In a bowl, combine the corn with salt, black pepper powder, rice flour, all-purpose flour, and corn starch. Toss well to coat all the kernels evenly. Transfer the coated corn to a fine mesh sieve and shake gently to remove excess flour.
  3. Deep Fry the Corn: Heat refined sunflower oil in a deep frying pan or wok until it becomes very hot. Carefully drop the coated corn kernels into the hot oil. Avoid stirring immediately; let the corn fry on high heat for about 1 minute until bubbling subsides. Continue frying for another 3 to 4 minutes until the corn is golden brown and crispy.
  4. Drain and Season: Remove the fried corn using a slotted spoon and place it on a paper towel to absorb excess oil. Transfer the crispy corn back into a bowl or sieve. Add peri peri seasoning, finely chopped onion, green chilli, coriander leaves, and lemon juice. Toss everything gently to combine the flavors evenly.
  5. Serve Immediately: Crispy corn tends to lose its crunch quickly, so serve immediately for the best texture and taste. Enjoy it as a flavorful snack or appetizer.
