Toffee
- 1 cup (2 sticks) unsalted butter
- 1 cup granulated sugar
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons water
Topping
- 1 cup semi-sweet or milk chocolate chips
- ½ cup chopped pecans, walnuts, or almonds
- Prepare Your Pan & Ingredients: Line a 9×13-inch baking dish or a baking sheet with parchment paper or a silicone mat. Measure and have all ingredients ready as the process moves quickly.
- Make the Toffee Base: In a heavy-bottomed saucepan, melt the butter, sugar, salt, and water over medium heat while stirring constantly. Cook until the mixture reaches a deep golden brown and hits 300°F (hard crack stage) on a candy thermometer, about 10-15 minutes. Remove from heat and stir in vanilla extract.
- Pour & Spread: Immediately pour the hot toffee mixture onto the prepared baking sheet and spread it evenly with a spatula. Let it sit for 1-2 minutes until it begins to firm up slightly.
- Add the Chocolate: Sprinkle the chocolate chips evenly over the slightly firm toffee. Let sit for 2 minutes to allow the chocolate to melt, then spread it evenly with a spatula.
- Sprinkle the Nuts: While the chocolate is still melted, sprinkle the chopped nuts over the top and gently press them to adhere.
- Let It Set & Break Into Pieces: Allow the toffee to cool at room temperature for 2 hours or refrigerate for 30 minutes to speed setting. Once hardened, break into bite-sized pieces and enjoy.
Notes
- Use a candy thermometer to achieve the perfect hard crack stage for the toffee.
- Choose your favorite nuts or skip them for a nut-free version.
- Store the toffee in an airtight container at room temperature for up to two weeks.
- If the toffee is too sticky to break easily, chill it longer in the refrigerator.
- For a variation, try topping with white chocolate or drizzling with caramel instead of nuts.
