- Prepare the cheese sauce: While the pasta cooks, heat a large saucepan over medium-low heat. Pour in the evaporated milk and bring it to a gentle simmer. Add the two packages of Garlic & Herb Boursin cheese to the milk. Stir continuously until the cheese has completely melted and blended into the milk, creating a smooth sauce – this should take about 3 minutes.
- Thicken the sauce: Return the sauce to a gentle simmer and continue to cook for another 2 to 3 minutes, stirring occasionally, until the sauce thickens slightly and develops a glossy sheen. Season the sauce with ½ teaspoon kosher salt at this stage to enhance flavor.
- Combine pasta and sauce: Add the drained pasta into the cheese sauce along with a splash of the reserved pasta water. Gently stir over medium-low heat, adding more pasta water as needed, until the sauce nicely coats the pasta. Taste and adjust seasoning with additional kosher salt if necessary.
