  • 1 cup Medjool dates (about 13 dates), pitted
  • ⅓ cup sunflower seed butter
  • 1 tsp vanilla extract
  • ⅓ cup protein powder (such as whey or plant-based)
  • ¼ cup cocoa powder
  • Pinch of salt

Coating (Optional)

  • ½ cup dark chocolate
  • ½ tsp coconut oil

Instructions

  1. Soften Dates: Remove the pits from your dates and soak them in hot water for 5 minutes. This softens the dates, making them easier to blend and creating a chewier texture for the filling.
  2. Blend Base Mixture: Drain the water from the dates and place them in your food processor along with the sunflower seed butter and vanilla extract. Blend until the mixture resembles a thick, sticky caramel consistency.
  3. Add Remaining Ingredients: Add the protein powder, cocoa powder, and a pinch of salt to the mixture. Blend again, stopping occasionally to scrape down the sides of the bowl to ensure everything is well combined.
  4. Form the Balls: Scoop the dough for the filling with a tablespoon measure and roll into balls, approximately one tablespoon in size, forming uniform protein bites.
  5. Chill the Bites (Optional): For a firmer texture and easier coating, place the balls on a lined baking sheet and freeze for at least 30 minutes.
  6. Melt Chocolate Coating (Optional): In a small microwavable dish, combine dark chocolate and coconut oil. Heat on high in 20-30 second intervals, stirring between each interval, until completely melted and smooth.
  7. Dip and Set: Remove the chilled bites and dip each one individually into the melted chocolate, covering them completely. Place coated bites back on the lined baking sheet and allow the chocolate to set at room temperature or in the refrigerator.

  • You can substitute sunflower seed butter with almond or peanut butter based on preference or allergy needs.
  • Select your preferred protein powder type—whey, pea, or any plant-based alternative works well.
