Pancakes
- 200g self-raising flour
- 1 tsp baking powder
- 1 tbsp golden caster sugar

- Cook the bacon: Heat the grill to high and arrange the bacon on a foil-lined baking tray. Grill for 5-7 minutes until crispy. Then turn off the grill but keep the tray inside to keep the bacon warm.
- Prepare the pancake batter: In a large bowl, mix the self-raising flour, baking powder, golden caster sugar, and a pinch of salt. Make a well in the center, then add the lightly beaten eggs, melted butter, and milk. Whisk together using a balloon whisk or electric hand whisk until smooth, then pour the batter into a jug for easy pouring.
- Cook the pancakes: Heat a knob of butter and 1 tsp vegetable oil in a large non-stick frying pan over medium heat. When the butter is frothy, pour rounds of batter about 8cm wide into the pan, leaving space between them. Cook for 1-2 minutes or until tiny bubbles appear on the surface and it begins to look set. Flip the pancakes and cook for an additional minute. Transfer cooked pancakes to the oven with the bacon to keep warm. Repeat until all batter is used.
- Assemble and serve: Arrange chosen toppings such as maple syrup, fresh raspberries, banana slices, berry compote, chocolate spread, blueberries, and mini marshmallows on a serving board. Add the warm pancakes and bacon just before serving. Replenish toppings as desired during the meal.
