  • 1 packet (1 ounce / 2 tablespoons) dry ranch seasoning mix

Wrapping and Serving

  • 8 egg roll wrappers
  • Water, for assembly
  • Ranch dressing or blue cheese dressing, for serving
  • Nonstick cooking spray, for air frying

Instructions

  1. Prepare the filling: In a large bowl, combine the diced rotisserie chicken, softened cream cheese, buffalo sauce, shredded cheddar cheese, shredded mozzarella cheese, and dry ranch seasoning mix. Stir thoroughly until all ingredients are well blended.
  2. Fill wrappers: Take one egg roll wrapper at a time and place about ⅓ cup of the chicken mixture in the center of the wrapper.
  3. Roll the egg rolls: Lightly wet the edges of the wrapper with water. Fold up the bottom corner over the filling, then fold in the right and left corners toward the center, pressing lightly to seal. Roll the wrapper tightly until the filling is fully enclosed and the edges are sealed.
  4. Preheat the air fryer: Set your air fryer to 400°F (204°C) to prepare for cooking.
  5. Air fry the egg rolls: Place the prepared egg rolls into the basket of the air fryer, making sure not to overcrowd (work in batches if necessary). Spray the tops of the egg rolls with nonstick cooking spray. Air fry for 3-4 minutes, then flip the egg rolls, spray again with cooking spray, and air fry for another 3-4 minutes or until they are golden brown and crispy.
  6. Serve: Remove the egg rolls from the air fryer and serve hot with ranch or blue cheese dressing for dipping, along with extra buffalo sauce if desired.
