Instructions

  1. Prepare the Pan and Melt Marshmallows: Grease a 9×13 inch pan or line it with parchment paper for easier removal. In a large pot over medium-low heat, melt the butter and mini marshmallows together, stirring constantly to prevent scorching until the mixture is smooth and fully combined.
  2. Combine Cereal and Press: Remove the pot from heat and immediately stir in the Rice Krispie Cereal until evenly coated. Press the mixture firmly into the prepared pan, ensuring an even layer. For a thicker treat, use a slightly smaller pan.
  3. Melt Caramel Mixture: Using a double boiler, melt the caramels with 1/4 cup of the heavy cream and vanilla extract (if using) over gentle heat. Stir frequently until smooth, about 10 minutes. Pour the caramel evenly over the Rice Krispie layer. Chill in the refrigerator for about 5 minutes to set slightly.
  4. Melt Chocolate Layer: In a microwave-safe bowl, combine the chocolate chips with the remaining 1/4 cup heavy cream. Microwave in 20-second intervals, stirring in between, until melted and smooth, approximately 1 minute. Spread this chocolate layer evenly over the caramel.
