Instructions

  1. Prepare the filling: Preheat the oven to 160°C (320°F) and line a baking tray with parchment paper. Place the shallots, coriander, and 1 tsp of olive oil in a food processor and blitz until finely chopped. Transfer the mixture to a bowl and combine thoroughly with the minced beef, paprika, salt, and black pepper.
  2. Assemble the parcels: Lay one filo sheet on a clean surface and drizzle with 1 tsp of olive oil. Brush the oil evenly over the sheet, then crinkle the sheet into an accordion fold along the long side. Fold it in half so the edges meet and slightly overlap. Spoon about 1 tablespoon of the beef filling along the far edge of the folded pastry and sprinkle with some grated mozzarella. Fold the sides in to enclose the filling, roll the pastry towards you tightly, and then flip the parcel so the crinkled side is on top. Repeat this process for all remaining filo sheets and filling.
  3. Bake the parcels: Arrange all assembled parcels on the prepared baking tray. Brush or spray the tops with the remaining olive oil to encourage crisping. Bake in the preheated oven for 25 to 30 minutes, or until the parcels are golden brown and crisp. Allow them to cool slightly before serving.
  4. Serve: These parcels are ideal as a snack, appetizer, or party bite. Serve warm for the best texture and flavor experience.
