A delicious and hearty Chicken Avocado Melt Sandwich combining tender grilled chicken, creamy avocado, melty cheese, and fresh vegetables, all layered between toasted bread and lightly seasoned for a perfect balance of flavors and textures. Ideal for a satisfying lunch or dinner.

Ingredients

Scale

Chicken

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Sandwich Fillings

  • 1 avocado, sliced
  • 4 slices of your favorite cheese (Swiss, cheddar, or provolone)
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced

Bread and Spread

  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • Butter or olive oil for grilling the sandwiches

Instructions

  1. Season the Chicken: Season the chicken breasts with salt and pepper on both sides, ensuring even coverage to enhance flavor.
  2. Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Cook the chicken breasts for 6-7 minutes on each side until fully cooked through and no longer pink inside. Remove from heat and let rest for a few minutes before slicing thinly.
  3. Prepare Sandwich Ingredients: While the chicken rests, slice the avocado and prepare cheese slices. Set all aside.
  4. Spread Condiments on Bread: Evenly spread a thin layer of mayonnaise and Dijon mustard on each slice of bread to add moisture and flavor.
  5. Assemble the Sandwich: On two slices of bread, layer the sliced chicken, avocado, cheese, red onion, and tomato. Top each with the remaining bread slices, mayo side down.
  6. Grill the Sandwich: Heat a skillet or grill pan over medium heat and add butter or olive oil. Place sandwiches in the skillet and cook until bread is golden brown and cheese melts, about 3-4 minutes per side. Press gently with a spatula to ensure even melting.
  7. Serve: Remove sandwiches from skillet, let cool for a minute, then slice in half and serve warm for the best taste experience.

Notes

  • Use ripe but firm avocados for easier slicing and better texture.
  • Feel free to customize the cheese type according to your preference; Swiss, cheddar, or provolone all melt well.
  • If you like extra flavor, add some fresh herbs like cilantro or basil inside the sandwich.
  • To make it spicier, add a few slices of jalapeño or a dash of hot sauce.
  • For a crispier sandwich, butter the outside of the bread before grilling.
