Ingredients

Scale

Filling

  • 1 can cream of chicken soup
  • 1/2 cup sour cream
  • 2/3 cup whole milk
  • 16 ounces frozen mixed vegetables
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 4 cups chicken breast, cooked and chopped
  • 1 cup cheddar cheese, shredded

Topping

  • 32 ounces frozen tater tots

Instructions

  1. Preheat Oven: Set your oven to 375 degrees Fahrenheit and prepare a 9×13 baking dish by spraying it with baking spray to prevent sticking.
  2. Mix Filling: In a large bowl, combine the cream of chicken soup, sour cream, whole milk, frozen mixed vegetables, dried thyme, kosher salt, ground black pepper, cooked and chopped chicken breast, and shredded cheddar cheese. Stir well until all ingredients are evenly incorporated.
  3. Assemble Pie: Pour the mixed filling into the prepared baking dish and spread it out evenly. Then, neatly arrange the frozen tater tots in rows on top of the filling to form a crispy crust once baked.
  4. Bake: Place the baking dish in the preheated oven and bake for 45-50 minutes or until the tater tots are golden brown and crispy on top, and the filling is hot and bubbly.
  5. Serve: Remove from oven and let the Chicken Tot Pie cool for a few minutes before serving to allow it to set slightly for easier portioning.

Notes

  • Use cooked chicken breast leftover or rotisserie chicken to speed up prep time.
  • For a lower-fat version, substitute sour cream with plain Greek yogurt and use reduced-fat cheddar cheese.
  • If fresh vegetables are preferred, lightly steam and drain them before mixing.
  • Tater tots can be substituted with frozen hash browns or diced potatoes for a different texture.
  • Make sure tater tots are arranged evenly to ensure a crisp and uniform topping.
  • The pie is best served warm but can be refrigerated and reheated for leftovers.
