Ingredients

Scale

For the Chicken and Chimichurri Marinade

  • 2 Chicken breasts
  • 1 cup Fresh parsley, chopped
  • 4 cloves Garlic, minced
  • ¼ cup Red wine vinegar
  • ½ cup Olive oil
  • ½ teaspoon Red pepper flakes
  • Salt and pepper to taste

For the Garlic Sauce

  • 1 cup Mayonnaise
  • ½ cup Sour cream or Greek yogurt
  • 1 tablespoon Lemon juice
  • 2 cloves Garlic, minced
  • Salt and pepper to taste

For the Bowl Assembly

  • 1 cup Diced tomatoes
  • 2 cups Fresh greens (spinach or arugula)

Instructions

  1. Prepare the chimichurri marinade: In a bowl, whisk together olive oil, minced garlic, chopped parsley, red wine vinegar, salt, and pepper. Coat the chicken breasts with this mixture and marinate for at least 30 minutes or overnight for enhanced flavor.
  2. Make the chimichurri sauce: Using a food processor or a bowl, blend chopped parsley, minced garlic, red pepper flakes, red wine vinegar, olive oil, and salt to create a chunky chimichurri sauce.
  3. Prepare the garlic sauce: In a separate bowl, mix mayonnaise, sour cream (or Greek yogurt), lemon juice, minced garlic, and a pinch of salt and pepper. Stir until smooth and refrigerate until ready to use.
  4. Grill the chicken: Heat the grill to medium-high. Grill marinated chicken breasts for 5 to 7 minutes per side, until nicely charred and fully cooked. Let the chicken rest for a few minutes before slicing thinly.
  5. Assemble the bowls: Place fresh greens in each bowl, arrange sliced grilled chicken on top, drizzle with chimichurri sauce, spoon diced tomatoes over the bowl, and finish with a generous scoop of the creamy garlic sauce.
  6. Serve and enjoy: Serve the chicken bowls immediately for best flavor, or store each component separately for a meal prep option.

Notes

  • Marinate the chicken overnight for deeper flavor infusion.
  • Adjust red pepper flakes according to your preferred spice level.
  • Use Greek yogurt as a healthier alternative to sour cream.
  • Fresh parsley is key for authentic chimichurri taste; cilantro can be added for variation.
  • Store components separately in airtight containers for up to 3 days to maintain freshness.
  • If you don’t have a grill, you can cook the chicken on a grill pan or in the oven under broiler.
