Ingredients

Scale

Protein

  • 34 boneless, skinless chicken breasts (about 1 lb), chopped into bite-sized pieces
  • ½ cup crispy bacon bits

Pasta

  • 16 oz fresh or frozen gnocchi

Dairy

  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese

Vegetables

  • 4 cups fresh spinach

Liquids & Seasonings

  • 2 cups low-sodium chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil (for cooking chicken, estimated)

Instructions

  1. Prepare Ingredients: Chop the boneless, skinless chicken breasts into bite-sized pieces to ensure they cook evenly and quickly during the sautéing process.
  2. Cook Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chopped chicken and cook until golden brown on all sides, approximately 5-7 minutes.
  3. Add Cream Cheese and Broth: Lower the heat to medium-low, add the cream cheese and low-sodium chicken broth to the skillet. Stir continuously until the cream cheese melts and the sauce becomes smooth and creamy.
  4. Cook Gnocchi and Spinach: Toss in the fresh or frozen gnocchi along with the fresh spinach into the skillet. Cover the skillet with a lid and simmer for 5-7 minutes until the gnocchi are tender and cooked through.
  5. Incorporate Cheese and Bacon: Stir in the shredded cheddar cheese and crispy bacon bits until the cheese has melted completely and the mixture is evenly combined.
  6. Serve: Serve the creamy crack chicken gnocchi hot in bowls. Add extra shredded cheddar cheese on top if desired for garnish and extra flavor.

Notes

  • You can substitute fresh spinach with kale or Swiss chard if preferred.
  • For a lower-fat version, use reduced-fat cream cheese and cheddar cheese.
  • If fresh gnocchi is unavailable, frozen gnocchi works perfectly; be sure to cook until tender.
  • Adjust seasoning with salt and pepper according to taste, especially after adding broth and cheese.
  • To make it gluten-free, use gluten-free gnocchi varieties.
