Instructions

  1. Prepare Workspace: Line a baking sheet or plate with parchment paper. Place a few spoonfuls of desiccated coconut into a small separate bowl; this is for rolling the energy balls later. Set both aside.
  2. Make the Mixture: In a large food processor, combine the pitted medjool dates, 1 cup of desiccated coconut, raw cacao powder, hemp seeds, and 2 tablespoons of water. Pulse the mixture until it forms a sticky, paste-like consistency. Add a splash more water if the mixture is too dry and not sticking together well.
  3. Form Balls: Scoop a few spoonfuls of the mixture with a large spoon and roll them between your palms to form balls. Then, roll each ball in the bowl with the extra desiccated coconut until fully coated. Place the finished balls onto the prepared parchment-lined tray. This part may be a little messy but fun!
  4. Repeat: Continue forming and rolling balls until all the mixture is used, making about 10-12 balls depending on your preferred size.
  5. Set the Balls: Place the tray with the energy balls in the freezer for about 2 hours to help them firm up.
  6. Serve and Store: Let the energy balls thaw for a couple of minutes before serving for the best soft and chewy texture. Store any leftovers in the fridge or freezer for freshness.
