Lemon Syrup
- 1 cup Water
- 1/2 cup Granulated sugar
- 2–3 tbsp Lemon juice
- 2–3 pcs Lemon peels

- 3/4 cup Cream (30-35% fat)
- 1 lb Mascarpone cheese
- 3/4 cup Icing sugar
- 3/4 cup Lemon curd (homemade or store-bought)
- 2 tbsp Lemon curd (for topping, optional)
- Lemon slices (for decoration)
- Prepare Serving Dish: Select a non-metallic serving dish of your choice, such as a 6″x 9″ casserole dish or similar, and keep it ready for assembly.
- Make Lemon Syrup: In a small saucepan, combine water, granulated sugar, and lemon peels. Heat on medium and bring to a simmer, cooking for about 5 minutes until sugar dissolves and flavors meld.
- Cool Syrup & Add Lemon Juice: Remove from heat and let the syrup cool. Then whisk in the fresh lemon juice, strain out the lemon peels, and transfer the syrup to a bowl. Set aside.
- Whip Cream: In a chilled mixing bowl, whip the cream for 4-5 minutes until soft to medium peaks form. Set aside.
- Prepare Mascarpone Mixture: In a large bowl, whisk the mascarpone cheese together with the icing sugar until smooth. Gently fold in the whipped cream and lemon curd, ensuring not to overmix to keep the mixture light and airy.
- Dip Ladyfingers: One at a time, quickly dip the ladyfinger cookies into the cooled lemon syrup, making sure they absorb enough liquid but don’t become soggy.
- First Layer Assembly: Arrange the soaked ladyfingers in a single layer at the bottom of your serving dish to form the base.
