- 2 1/2 Tbsp coconut oil
- 1 1/2 cups rolled oats
- 3 Tbsp honey
- 1/8 tsp salt
- 1/3 cup chopped pecans
- 3 Tbsp finely shredded coconut (optional)
- Prepare Ingredients: Measure out all ingredients and have them ready for easy access. Line a baking sheet with parchment paper for cooling the granola.
- Melt Coconut Oil: Place a 12-inch non-stick skillet over medium heat and melt the coconut oil completely.
- Toast Oats: Add the rolled oats to the skillet. Cook while stirring and spreading the oats evenly almost constantly until they are slightly toasty and crisp, with a light deepening in color—this takes about 4 to 6 minutes.
- Add Honey and Salt: Reduce the heat to medium-low. Pour in the honey and sprinkle the salt over the oats, stirring immediately to combine.
- Cook with Honey: Continue cooking while stirring and spreading evenly almost constantly until the oats start to turn a light golden color, about 1 minute.
- Add Pecans and Coconut: Stir in the chopped pecans and shredded coconut (if using). Cook the mixture just until it turns barely golden brown, which should take about 1 minute longer.
- Cool and Form Clusters: Immediately pour the hot granola mixture onto the prepared parchment-lined baking sheet. Spread it out and press down gently with a spatula to form clusters.
- Set the Granola: If you want the granola to set faster, chill it in the refrigerator or freezer for about 5 minutes until it’s cool and crisp. Once set, store the granola in an airtight container at room temperature or refrigerate for longer shelf life.
