Ingredients

- 1 sheet frozen puff pastry, thawed in fridge overnight
- ½ cup fig jam
- 4 oz. log goat cheese
- ½ cup raw walnuts or pecans, chopped
- 1 egg
- 1 teaspoon finely chopped fresh rosemary leaves
- Flaky sea salt, for topping
- Preheat the oven: Preheat your oven to 400ºF (204ºC). Generously spray a mini muffin tin with cooking spray to prevent sticking.
- Prepare the puff pastry: Dust your countertop and rolling pin with all-purpose flour. Roll out the thawed puff pastry sheet into a 10-inch by 15-inch rectangle. Using a large knife, cut the pastry into 24 squares approximately 2.5 inches each, arranged as 4 columns by 6 rows. Place each square into a muffin tin cup, pressing gently to form a cup shape. Prick the bottom of each cup twice with a fork to prevent excessive puffing during baking.
- Fill the pastry cups: Spoon ½ to ¾ teaspoon of fig jam into each pastry cup. Top with a few crumbles of goat cheese, then add about 1 teaspoon of chopped walnuts or pecans on top.
- Apply egg wash: Beat the egg lightly with a fork. Using a pastry brush, brush the edges of each puff pastry cup with the egg wash to ensure a beautiful golden crust when baked.
- Bake the bites: Place the muffin tin in the preheated oven and bake for 12 to 14 minutes, or until the puff pastry is golden brown and the goat cheese has melted nicely.
