Instructions

  1. Preheat Oven: Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Mix Meatloaf Ingredients: In a large mixing bowl, combine ground chicken, grated Parmesan, breadcrumbs, finely chopped parsley, minced garlic, beaten egg, dried oregano, salt, and black pepper thoroughly until all ingredients are evenly distributed.
  3. Add Milk and Combine: Pour in the whole milk and gently mix the mixture until it becomes uniform and holds together well without being overly wet.
  4. Form Mini Loaves: Divide the mixture evenly into four portions. Shape each portion into a compact mini loaf and place them spaced apart on the prepared baking sheet to allow even cooking.
  5. Add Olive Oil and Cheese: Drizzle each mini loaf with extra virgin olive oil for moisture and flavor. Optionally, sprinkle the tops with grated mozzarella cheese for a cheesy crust.
