Beignets
- 3/4 cup ground dark coffee
- 3 cups cold water
- 1/3 cup granulated sugar
- 1 envelope (0.25-ounce) active dry yeast
- 7 ¼ cups all-purpose flour
- 1 ½ cups warm half and half (100-110°F)
- 2 large eggs, beaten
- 1/4 cup butter, melted
- 1 teaspoon salt
- Vegetable oil, for frying

- 1 teaspoon vanilla extract
- 1/2 cup brewed coffee (reserved from above)
