Instructions

  1. Boil Water: In a heavy bottomed saucepan, bring 3 cups of water to a rolling boil over high heat.
  2. Add Rice and Butter: Stir in the Arborio rice and butter into the boiling water. Cook and stir for 1 minute to evenly coat the rice with butter.
  3. Simmer Rice: Reduce the stove heat to low, cover the saucepan with a tight fitting lid, and let the rice cook undisturbed for 20-25 minutes until tender and water is absorbed.
  4. Cool Rice: Remove the pot from heat, transfer the cooked rice to a large bowl, fluff gently with a fork, and allow it to cool to room temperature.
  5. Mix Fruits and Marshmallows: Once the rice is cooled, add the pineapple tidbits, chopped strawberries, mini marshmallows, and sugar. Stir gently to combine, then allow the mixture to rest for 10 minutes to let flavors meld.
  6. Whip Cream: Using a stand mixer or hand mixer, beat the heavy whipping cream on high speed until stiff peaks form creating a thick, fluffy whipped cream.
  7. Fold in Whipped Cream: Carefully fold the whipped cream into the rice and fruit mixture with a spatula, being gentle to maintain the fluffiness.
  8. Garnish: Top the prepared glorified rice with maraschino cherries and extra marshmallows if desired for added color and sweetness.
  9. Chill and Serve: Refrigerate the salad until well chilled and serve cold for best texture and flavor.
