Ingredients

Scale

Roasted Sweet Potatoes

  • 2 medium sweet potatoes, diced
  • 2 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Ground Beef Mixture

  • 1 lb lean ground beef
  • 1 yellow onion, diced
  • 1 taco seasoning packet (about 1 oz)

Toppings and Garnishes

  • 1 avocado, sliced
  • 1 cup cottage cheese
  • 2 tbsp hot honey

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the sweet potatoes.
  2. Roast Sweet Potatoes: In a large bowl, toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper until evenly coated. Spread them in a single layer on a baking sheet. Roast in the oven for 40 to 45 minutes or until tender and slightly caramelized, stirring halfway through for even cooking.
  3. Sauté Onions and Cook Ground Beef: While the sweet potatoes roast, heat a skillet over medium heat and add a little olive oil. Sauté the diced yellow onion until softened and translucent, about 5 minutes. Add the ground beef to the skillet along with the taco seasoning packet. Cook, breaking up the beef with a spoon, until browned and cooked through, about 8-10 minutes. Drain excess fat if necessary.
  4. Assemble Bowls: To assemble, place a portion of the roasted sweet potatoes at the base of each bowl. Layer with the seasoned ground beef mixture, then add sliced avocado and a generous spoonful of cottage cheese on top.
  5. Drizzle Hot Honey: Finish each bowl by drizzling 2 tablespoons of hot honey over all the ingredients to add a sweet and spicy kick right before serving.

Notes

  • For a spicier kick, add chili flakes or hot sauce to the ground beef while cooking.
  • Use low-fat cottage cheese to reduce calories, or substitute with Greek yogurt for a different texture.
  • Sweet potatoes can be cut smaller for faster roasting or larger pieces for a chunkier bite.
  • Store leftovers separately to keep avocado fresh and enjoy cold or reheated.
  • Hot honey can be homemade by mixing honey with chili flakes and warming gently.
