Ground Turkey Mixture
- 1 lb ground turkey
- 1 Tbsp sesame oil (or favorite cooking oil)
- 2–3 garlic cloves, minced
- 2 tsp grated ginger
- ½ tsp smoked paprika
- ½ tsp onion powder
- 3 Tbsp low sodium soy sauce
- 1–2 Tbsp sriracha
- 2–3 Tbsp chicken broth
- 2 tsp honey
- ½ tsp black pepper
- ½ tsp sea salt (more or less to taste)
- 2 tsp cornstarch
Bang Bang Sauce
- ½ cup mayonnaise
- 3 Tbsp sweet chili sauce
- ½–1 Tbsp sriracha (more to increase spice level)
- 1 tsp rice vinegar
- 2 tsp honey
For Serving
- Cooked rice
- Shredded carrots
- Sliced cucumbers
- Shelled edamame
- Pickled onions
- Avocado
- Shredded cabbage
- Sliced green onion
- Sesame seeds
- Prepare Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until smooth. Adjust the flavor by adding more sriracha for heat or honey and sweet chili sauce for sweetness. Chill the sauce until ready to serve.
- Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat. Add ground turkey, breaking it into small pieces with a spatula. Cook until browned and no longer pink, reaching an internal temperature of 165°F (74°C).
- Add Seasonings and Simmer: Reduce heat to medium-low and stir in minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Let the mixture simmer for 2-3 minutes, stirring occasionally to blend flavors.
- Thicken the Sauce: Sprinkle cornstarch evenly over the turkey mixture while stirring continuously to prevent lumps. Cook for another minute until the sauce thickens. Optionally, stir in 2 tablespoons of the prepared Bang Bang sauce into the turkey mixture for added flavor.
- Assemble Rice Bowls: In individual bowls, layer cooked rice and top with shredded carrots, sliced cucumbers, shelled edamame, pickled onions, avocado, shredded cabbage, and the ground turkey mixture. Drizzle additional Bang Bang sauce on top and garnish with sliced green onions and sesame seeds. Serve immediately.
