Buckeye Mixture
- 1 1/3 cup almond flour
- 1 cup natural peanut butter
- 1/4 tsp salt (only if peanut butter isn’t salted)
- 1/4 cup maple syrup
- 1 tsp vanilla extract
Chocolate Coating
- 1 cup chocolate chips
- 1 tsp coconut oil
- Make the dough: In a bowl, combine almond flour, natural peanut butter, salt (if peanut butter is unsalted), maple syrup, and vanilla extract. Mix well until a uniform dough forms.
- Shape the balls: Roll the mixture into small balls, about 1 inch in diameter, then place them onto a tray and refrigerate for 30 minutes to firm up.
- Melt the chocolate: In a small microwave-safe bowl, melt the chocolate chips and coconut oil together in 30-second increments, stirring in between, until smooth and fully melted.
- Dip the buckeyes: Using a fork, carefully dip each chilled ball into the melted chocolate, coating approximately two-thirds of the surface. Remove with the fork, allowing excess chocolate to drip off, and place back on the tray.
- Chill again: Refrigerate the dipped buckeyes for at least 15 minutes to allow the chocolate to set completely.
- Store and serve: Keep the buckeyes stored in the refrigerator. Enjoy chilled for best texture and flavor.
