This Homemade Italian Sausages recipe offers a simple and authentic way to make flavorful Italian sausages from scratch using ground pork and a fragrant Italian seasoning blend. Perfect for grilling, frying, or baking, these sausages bring the classic taste of Italy to your kitchen with control over ingredients and freshness.

Ingredients

Scale

Meat

  • 5 lbs. ground pork

Seasoning

  • 1.6 oz. Mild Italian Sausage Seasoning (store-bought or homemade blend)

Other

  • Collagen casings for stuffing

Instructions

  1. Prepare the meat. In a large bowl, place 5 pounds of ground pork, making sure it is fresh and well-chilled to facilitate mixing and stuffing later.
  2. Add seasoning and mix. Sprinkle the 1.6 ounces of mild Italian sausage seasoning evenly over the ground pork. Mix thoroughly with your hands or a spoon until the seasoning is fully incorporated into the meat, ensuring an even flavor throughout.
  3. Prepare the sausage stuffer. Set up your sausage stuffer according to the manufacturer’s instructions. This can be a manual or electric stuffer suitable for home use.
  4. Stuff the casings. Load the seasoned pork mixture into the sausage stuffer and carefully stuff it into prepared collagen casings, taking care not to overfill. Once filled, twist the casing at regular intervals to create individual sausage links of your preferred size.
  5. Store or cook. Once linked, the sausages can be refrigerated for up to 2 days or frozen for longer storage. Cook before eating by grilling, pan-frying, or baking until fully cooked through.

Notes

  • You can make your own Italian sausage seasoning by combining fennel seeds, garlic powder, paprika, salt, pepper, and crushed red pepper.
  • Make sure to soak collagen casings in warm water before stuffing to make them pliable.
  • Keep the sausage mixture cold during the process to prevent fat from melting and maintain texture.
  • Cook sausages until an internal temperature of 160°F (71°C) is reached for safety.
  • Leftover sausages can be stored in the refrigerator for 2 days or frozen for up to 3 months.
