Ingredients

Scale

Dip Ingredients

  • 3 cups frozen corn kernels
  • 1/4 cup chopped pickled jalapenos
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 8 ounces grated provolone or Monterey jack cheese
  • 8 ounces cream cheese, softened to room temperature

For Serving

  • Fritos or other chips/crackers for dipping

Instructions

  1. Preheat the oven. Preheat your oven to 375°F (190°C) and prepare a medium-sized baking dish by spraying it lightly with cooking spray to prevent sticking.
  2. Combine ingredients. In a mixing bowl, combine the frozen corn kernels, chopped pickled jalapenos, salt, garlic powder, onion powder, grated cheese, and softened cream cheese. Mash the cream cheese into the corn mixture until everything is well incorporated. Reserve a small amount of cheese for topping later.
  3. Transfer to baking dish. Press the combined mixture evenly into the prepared baking dish or a pie plate. Sprinkle the reserved cheese over the top to create a cheesy crust.
  4. Bake the dip. Place the baking dish uncovered in the preheated oven and bake for 30 to 40 minutes, or until the dip is bubbly and golden brown on top.
  5. Rest and serve. Remove the dip from the oven and let it rest for about 5 minutes to set. Serve warm with Fritos, chips, or crackers for dipping.

Notes

  • You can substitute frozen corn with fresh corn kernels if available.
  • Adjust the amount of jalapenos depending on your preferred spice level.
  • For extra creaminess, add a splash of sour cream or mayonnaise to the mixture.
  • This dip reheats well in the oven or microwave; keep it covered to retain moisture.
  • Use gluten-free chips to make this appetizer gluten-free friendly.
