Ingredients

Scale

Vegetables

  • 2 cups cauliflower florets
  • 2 cups broccoli florets

Dairy & Dairy Alternatives

  • 1 cup shredded cheddar cheese
  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup milk

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Other Ingredients

  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • 1/2 cup panko breadcrumbs (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with cooking spray to prevent sticking.
  2. Parboil the Vegetables: Bring a large pot of water to a boil. Add the cauliflower and broccoli florets and cook for 3–4 minutes until slightly tender but still crisp. Drain thoroughly and set aside.
  3. Prepare the Creamy Mixture: In a mixing bowl, combine the softened cream cheese, sour cream, milk, garlic powder, onion powder, salt, and black pepper. Stir well until the mixture is smooth and fully blended.
  4. Combine Ingredients: Fold the cooked cauliflower and broccoli into the creamy mixture along with the crumbled cooked bacon and half of the shredded cheddar cheese. Mix gently until everything is evenly coated.
  5. Assemble the Casserole: Pour the mixture into the prepared baking dish and spread it out evenly. Sprinkle the remaining cheddar cheese on top, then add panko breadcrumbs if using for a crunchy topping.
  6. Bake: Place the casserole in the preheated oven and bake for 25–30 minutes, or until the casserole is bubbly and the top is golden brown.
  7. Garnish and Serve: Remove the casserole from the oven and let it cool for a few minutes. Garnish with chopped green onions before serving for added freshness and color.

Notes

  • For a gluten-free version, substitute panko breadcrumbs with gluten-free breadcrumbs or omit them entirely.
  • Use turkey bacon or omit bacon to make it suitable for different dietary preferences.
  • Adjust seasoning to taste, especially salt if you use salty bacon.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated gently in the oven or microwave.
