Ingredients

Scale

Sausage

  • 2 pounds kielbasa sausage

Glaze

  • 1/2 cup maple syrup
  • 1/2 cup barbecue sauce
  • 2 tablespoons Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Garnish

  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat Oven – Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Prepare Kielbasa – Cut the kielbasa sausage into 2-3 inch pieces. Place each piece between two chopsticks or wooden spoons to serve as guides, then make thin, evenly spaced cuts along the length of each piece without cutting all the way through, creating the signature Hasselback effect.
  3. Make Glaze – In a small bowl, whisk together the maple syrup, barbecue sauce, Dijon mustard, smoked paprika, garlic powder, black pepper, and olive oil until fully combined into a smooth glaze.
  4. Glaze the Sausages – Arrange the prepared kielbasa pieces on the lined baking sheet. Generously brush the maple BBQ glaze all over each piece, making sure to get some glaze in between the slices for maximum flavor penetration.
  5. Bake – Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the kielbasa pieces are browned and crispy on the edges. Halfway through the baking time, baste the sausages with additional glaze to enhance the flavor and caramelization.
  6. Cool and Garnish – Remove the kielbasa bites from the oven and allow them to cool slightly. Garnish with chopped parsley, if desired, before serving to add a fresh touch and color contrast.

Notes

  • Use chopsticks or wooden spoons as guides to avoid slicing through the sausage completely and ensure even slices.
  • Feel free to adjust the level of smoked paprika or black pepper to suit your taste preferences.
  • Maple syrup adds a lovely sweetness that balances the smoky flavors in the barbecue sauce.
  • These bites can be served warm or at room temperature, making them great for parties and gatherings.
  • For a spicier variation, add a pinch of cayenne pepper to the glaze.
