This Melty Chilli Cheese & Thyme Fondue Dip is a luscious blend of creamy brie, soft cheese, and nutty gruyère with a spicy kick from chilli flakes and a fragrant touch of fresh thyme. Cheese Mixture

  • 200g brie, roughly chopped
  • 100g soft cheese
  • 100g gruyère, rind removed, chopped into small chunks
  • 2 tbsp grated parmesan (divided)
  • 2 tbsp milk
  • 2 tsp cornflour
  • A few thyme sprigs, leaves picked, plus extra for sprinkling
  • Pinch of chilli flakes, plus extra for sprinkling

Other Ingredients

  • 100g sweet chilli jam
  • Crusty bread, to serve

Instructions

  1. Prepare the cheese mixture: Place the brie, soft cheese, gruyère, half of the grated parmesan, milk, and cornflour into a food processor. Blitz until the mixture is completely smooth and creamy. Stir in the fresh thyme leaves and a pinch of chilli flakes evenly throughout the cheese mixture.
  2. Layer the dip: Spread the sweet chilli jam evenly over the base of a baking dish measuring approximately 15 x 12cm. Spoon the cheese mixture over the jam, smoothing it out evenly. Sprinkle the remaining parmesan over the top, then add a little more thyme leaves and chilli flakes as garnish.
  3. Chill and prepare to bake: If not serving immediately, cover the dish and keep it chilled for up to three days before baking.
  4. Bake the dip: Preheat your oven to 180°C (160°C fan) or gas mark 3. Place the baking dish on a baking tray and bake for 20 minutes, or until the dip is bubbling hot and heated through.
  5. Grill for finishing touch: Switch your oven to grill on medium-high heat. Grill the dip for an additional 2 to 3 minutes until the top is golden brown and crispy.
  6. Rest and serve: Remove the dish from the oven and let it sit for 5 minutes to set slightly. Serve warm with plenty of crusty bread for dipping and enjoying.
