Scale

Cookie Dough Ingredients

  • 1 cup peanut butter
  • 3 Tbsp. butter, softened
  • 1 and ¼ cups powdered sugar
  • 1 cup honey nut granola, big clumps broken up

Filling

  • ¼ cup raspberry jam, or other red jam of your choice

Instructions

  1. Cream Peanut Butter and Butter: In a stand mixer fitted with a paddle attachment, cream together the peanut butter and softened butter until smooth and well combined.
  2. Mix in Powdered Sugar and Granola: Stir in the powdered sugar and broken-up honey nut granola to the peanut butter mixture until a soft dough forms.
  3. Form Cookies: Roll the dough into 24 balls and place them in a single layer on a parchment-lined tray. Gently press your thumb or the back of a greased spoon into each ball to create a small indentation in the center.
  4. Fill with Jam: Spoon a small amount of raspberry jam or your preferred red jam into each indentation.
  5. Chill to Set: Chill the cookies in the refrigerator for at least 1 hour or until firm. Store the cookies in the refrigerator to keep them fresh.

Notes

  • Use any type of red jam depending on your taste, such as strawberry or cherry.
  • Ensure the granola has big clumps for texture rather than fine crumbs.
  • For easier thumbprints, grease your thumb or spoon before pressing the dough.
  • Store cookies in an airtight container in the refrigerator for up to a week.
  • These cookies are no-bake, making them ideal for hot days or quick dessert fixes.
