Ingredients

Scale

For the Filling

  • 8 oz Feta Cheese (can substitute with goat cheese or ricotta)
  • 2 tablespoons Fresh Dill (for best flavor)
  • 2 tablespoons Fresh Mint (basil can be a substitute)
  • 1 tablespoon Lemon Zest (from unwaxed lemons)
  • Freshly ground black pepper to taste

For the Pastry

  • 8 sheets Phyllo Pastry (keep covered with damp cloth)
  • 4 tablespoons Olive Oil (for brushing between layers and tops)

For the Chili Honey Drizzle

  • ½ cup Honey (use high-quality honey)
  • 1 tablespoon Chili Flakes (adjust to spice preference)
  • 1 teaspoon Lemon Juice (freshly squeezed)

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare the Filling: In a mixing bowl, crumble the feta cheese and combine it with finely chopped dill, mint, lemon zest, and freshly ground black pepper until the mixture is well incorporated and flavorful.
  3. Prepare the Phyllo Pastry: Lay two sheets of phyllo pastry flat on a clean surface. Brush each sheet generously with olive oil, then cut them into strips suitable for rolling.
  4. Assemble the Rolls: Place a tablespoon of the feta mixture at one end of each phyllo strip. Fold the edges over the filling to seal and roll tightly into neat parcels.
  5. Brush and Bake: Place the rolls on the prepared baking sheet. Brush the tops with additional olive oil to encourage crispness. Bake in the preheated oven for 18-20 minutes or until the rolls are golden brown and crispy.
  6. Make the Chili Honey Drizzle: While the rolls are baking, combine honey, chili flakes, and lemon juice in a small saucepan over low heat. Stir gently until warmed through and infused with the chili flavor. Remove from heat.
  7. Serve: Once the rolls are out of the oven and slightly cooled, drizzle the spicy chili honey over the top and serve immediately for the best flavor and texture experience.

Notes

  • Keep the phyllo pastry sheets covered with a damp cloth to prevent them from drying out during assembly.
  • Adjust chili flakes in the honey drizzle for a milder or spicier flavor depending on your taste.
  • You can substitute fresh herbs with dried if fresh is unavailable, but reduce quantity to one-third.
  • For a vegetarian version, ensure your feta cheese is made without animal rennet.
  • These rolls are best enjoyed fresh from the oven but can be reheated briefly to restore crispiness.
