Ingredients

Scale

Main Ingredients

  • 2 cups mashed potatoes (prepared and cooled)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1/4 cup green onions, chopped (optional)
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Breading

  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko or regular)

Cooking

  • Oil for frying (vegetable or canola oil)

Instructions

  1. Prepare the Mixture: In a large bowl, combine the mashed potatoes, shredded cheese, chopped green onions if using, garlic powder, salt, and pepper. Mix well until all ingredients are evenly incorporated. Cover the bowl and refrigerate for about 30 minutes to allow the mixture to firm up, making it easier to shape.
  2. Shape the Croquettes: After chilling, scoop approximately 2 tablespoons of the potato mixture and shape it into small oval or round croquettes. Continue shaping the rest of the mixture similarly, ensuring uniform size for even cooking.
  3. Breading the Croquettes: Set up a breading station with three separate bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each croquette first in the flour, then dip it into the beaten eggs, and finally coat it with breadcrumbs thoroughly.
  4. Fry the Croquettes: Heat about 1/2 inch of oil in a large skillet over medium heat until it reaches approximately 350°F (175°C). Carefully place the breaded croquettes into the hot oil in batches, avoiding overcrowding. Fry each side for 3-4 minutes or until golden brown and crispy. Once cooked, transfer the croquettes to a paper towel-lined plate to drain excess oil.
  5. Serve: Serve the croquettes warm, garnished with additional chopped green onions if desired. Enjoy them with your favorite dipping sauce as a delightful appetizer or snack.

Notes

  • Use cold mashed potatoes for easier shaping and better texture.
  • Feel free to experiment with different types of cheese for varied flavors.
  • If you want a healthier version, you can bake the croquettes instead of frying.
  • Ensure the oil is hot enough to avoid soggy croquettes but not too hot to burn the crust.
  • These croquettes can be made ahead and frozen before frying; just add a couple extra minutes to the frying time.
