Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough for roasting the sweet potato rounds to a crispy perfection.
  2. Prepare Sweet Potatoes: Wash the sweet potatoes thoroughly and pat them dry. Slice each potato into ⅓-inch thick rounds for even cooking and optimal texture.
  3. Coat with Oil and Spices: Drizzle the olive oil onto a large rimmed baking sheet. Arrange the sweet potato rounds on the sheet, making sure they are not touching to allow proper roasting. Sprinkle the cinnamon, smoked paprika, ground cumin, ground coriander, red pepper flakes, kosher salt, and black pepper evenly over the sweet potatoes. Drizzle the 1 tablespoon of honey on top. Turn the potatoes gently to coat them evenly in the oil, spices, and honey.
  4. First Bake: Place the sheet in the preheated oven and bake the sweet potatoes for 20 minutes until they start to soften and brown.
  5. Flip and Roast Again: Carefully flip each sweet potato round to ensure even cooking. Return the tray to the oven and continue roasting for another 20 to 25 minutes until the rounds turn golden brown and are crispy around the edges.
