For the Salmon Filling

  • 2 large salmon fillets, de-skinned and chopped into cubes
  • 2 garlic cloves, crushed (optional)
  • 2 stalks celery, finely chopped
  • 1 carrot, finely chopped
  • 1 cup peas (150g)
  • Handful vegan cheese, grated
  • ½ lemon, zest and juice
  • Handful fresh parsley, chopped
  • Handful spinach (optional)
  • Drizzle olive oil
  • Pinch salt & pepper

For the Mashed Potato Topping

  • 1 kg potatoes, roughly chopped
  • Olive oil (for mashing)
  • Splash almond milk (for mashing)
  • Salt & pepper, to taste

Instructions

  1. Preheat Oven and Boil Potatoes: Preheat your oven to 200°C. Roughly chop the potatoes (no need to peel) and boil them for 12 minutes until tender.
  2. Prepare Salmon Filling: While the potatoes are boiling, de-skin the salmon and chop it into cubes. In a baking dish, combine the salmon, crushed garlic cloves, chopped celery, carrot, peas, vegan cheese, lemon zest and juice, chopped parsley, and spinach. Drizzle with olive oil and season with a pinch of salt and pepper. Mix everything together quickly with your hands to combine well.
  3. Mash Potatoes: Drain the boiled potatoes and mash them using olive oil and a splash of almond milk for creaminess. Season with salt and pepper to taste.
  4. Assemble the Pie: Spread the mashed potatoes evenly over the salmon and vegetable mixture in the baking dish. Use a fork to roughly spread the mash and press the edges down to seal the filling.
  5. Bake: Place the pie in the preheated oven and bake for 30 minutes at 200°C until the top is golden and slightly crisp.
