Instructions

  1. Add ingredients to the slow cooker: Place the peeled and diced potatoes, chopped onion, minced garlic, chopped bell pepper, diced celery, smoked paprika, Cajun seasoning, dried thyme, salt, pepper, and broth into your slow cooker.

  3. Mash potatoes for thickness: Use a potato masher or an immersion blender to mash some of the potatoes, leaving some chunks intact to create a thicker texture while maintaining some bite.
