  • 3 onions (quartered, skins removed)

Instructions

  1. Prepare Garlic Butter Rub: In a small bowl, combine the softened butter with pressed garlic cloves, finely chopped fresh rosemary, dried oregano, salt, freshly ground black pepper, and dried thyme leaves. Mix well until evenly incorporated.
  2. Apply the Rub: Pat the beef bottom round roast dry using paper towels. Generously slather the garlic herb butter mixture all over the roast on every side to ensure full flavor penetration during cooking.
  3. Setup Slow Cooker: Quarter the onions and peel off the skins. Place the onions evenly across the bottom of the slow cooker. Position the roast beef on top of the onions with the fatty side facing down. This allows the fat to baste the meat as it cooks.
