Sweet Churro Donut Bites are a delightful homemade treat combining the warmth of cinnamon sugar-coated donuts with a rich chocolate ganache drizzle. These bite-sized donuts are baked to a golden perfection, then coated in a buttery cinnamon sugar mixture reminiscent of classic churros, and finished with a luscious dark chocolate topping, making them an irresistible dessert or snack.

Ingredients

Scale

Donut Batter

  • 3 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 1/3 cups milk
  • 1/3 cup sugar
  • 2 cups flour
  • 1/2 cup unsalted butter (melted and cooled to room temperature)
  • 1 tsp baking powder
  • 1 pinch salt

Churro Topping

  • 1/2 cup sugar (granulated)
  • 1/4 cup unsalted butter (melted and kept warm)
  • 2 tbsp ground cinnamon

Chocolate Drizzle

  • 1/2 cup chopped dark chocolate
  • 2 tbsp heavy cream

Instructions

  1. Prepare the Dry and Wet Ingredients: In a large bowl, combine the flour, sugar, cinnamon, baking powder, and salt. In a separate bowl, whisk together the eggs, milk, vanilla, and melted cooled butter until well combined.
  2. Create the Batter: Gradually incorporate the dry ingredients into the wet ingredients bowl. Stir until the mixture is smooth and pourable with no lumps.
  3. Bake the Donuts: Spoon or pipe the batter into a DIY doughnut tin. Bake in a preheated 350°F (175°C) oven for 20-25 minutes until lightly golden. Let the donuts cool in the tin for 5 minutes before transferring them to a wire rack and removing the foil.
  4. Prepare the Topping: While the donuts cool, melt 1/4 cup butter in a small bowl. In another bowl, mix sugar with cinnamon and set aside.
  5. Make the Chocolate Ganache: Melt the chopped chocolate either in the microwave or over a bain-marie. Stir in the heavy cream until the ganache is thick and shiny.
  6. Assemble the Donuts: Brush each cooled donut with the melted butter, then roll them in the cinnamon sugar mixture to coat all sides. Dip the top half of each donut into the chocolate ganache, coating generously. Serve and enjoy!

Notes

  • Ensure the melted butter for the batter is cooled to room temperature before mixing to prevent curdling.
  • Use granulated sugar for the churro topping for best coating and texture.
  • Dark chocolate provides a richer flavor for the ganache, but milk chocolate can be used as an alternative.
  • Be careful not to overbake the donuts to keep them soft and tender.
  • For easier removal, grease the doughnut tin well or use foil liners.
