Ingredients

Scale

Main Ingredients

  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • 1 cup pineapple juice
  • 1 cup diced pineapple (fresh or canned)
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • ¼ teaspoon black pepper

Optional Additions

  • Sliced green onions, for garnish
  • Red pepper flakes, for spice
  • Chopped bell peppers, for color and crunch

Special Garnishes

  • Fresh cilantro or parsley
  • Sesame seeds

Instructions

  1. Prepare Chicken: Place the whole or cut chicken breasts at the bottom of the crockpot ensuring they lay flat for even cooking.
  2. Make Sauce: In a medium bowl, whisk together pineapple juice, diced pineapple, soy sauce, brown sugar, minced garlic, ground ginger, and black pepper until the sugar completely dissolves and flavors meld.
  3. Combine & Cook: Pour the pineapple sauce mixture over the chicken in the crockpot, making sure all pieces are coated. Cover with the lid.
  4. Slow Cook: Set crockpot to low and cook for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is thoroughly cooked and tender.
  5. Shred Chicken: Use two forks to shred the chicken directly in the crockpot, then stir the shredded chicken into the flavorful sauce to absorb all the juices.
  6. Serve: Serve the hot Hawaiian chicken garnished with sliced green onions, sesame seeds, and optional fresh herbs. Pair with rice or your favorite sides.

Notes

  • Chicken can be left whole for shredding later or cut into pieces for faster cooking.
  • Add chopped bell peppers or red pepper flakes for extra crunch or spice.
  • Use fresh pineapple for a brighter flavor; canned pineapple works well too.
  • Adjust brown sugar quantity to control sweetness level.
  • Garnishing with fresh cilantro or parsley adds freshness and color.
