  • 1 cup broccoli florets
  • 1/2 cup sliced mushrooms
  • 2 green onions, sliced

Sauce

  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp grated fresh ginger
  • 1 tsp minced garlic
  • 1 tbsp vegetable oil for cooking

Instructions

  1. Prepare the tofu: Drain the tofu and pat it dry with paper towels. Cut into bite-sized cubes to ensure even cooking.
  2. Cook the noodles: Boil a large pot of water and cook the lo mein noodles according to package instructions until al dente. Drain and set aside.
  3. Sauté tofu and vegetables: Heat vegetable oil in a large skillet or wok over medium-high heat. Add tofu cubes and cook until golden and crispy on all sides, about 5-7 minutes. Remove tofu and set aside. In the same pan, add a bit more oil if needed and sauté carrots, bell peppers, broccoli, mushrooms, and green onions until tender-crisp, about 4-5 minutes.
  4. Make the sauce: In a small bowl, mix soy sauce, sesame oil, grated ginger, and minced garlic.
  5. Combine and toss: Return tofu to the skillet with the sautéed vegetables. Add the cooked noodles and pour the sauce over everything. Toss gently to combine and heat through for 2-3 minutes.
  6. Serve: Remove from heat and serve immediately for a warm, flavorful tofu lo mein dish.
