Instructions

  1. Prepare the Streusel Topping: In a bowl, combine flour, brown sugar, cinnamon, and salt. Cut in cold cubed butter using a pastry cutter or fingers until the mixture resembles coarse crumbs. Set aside in the refrigerator.
  2. Make the Batter: In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, beat the eggs and sugar until combined, then add yogurt, melted butter, and vanilla extract. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  3. Assemble the Cake: Preheat the oven to 350°F (175°C). Grease and flour a 9-inch square baking pan. Spread half of the batter evenly in the pan. Sprinkle half of the streusel topping over the batter. Add the remaining batter over the streusel layer and finish with the remaining streusel on top.
